Gluten Free Oatmeal Cookies

Ingredients
1 cup gluten free rolled oats
1/2 cup oat flour
1 tsp of cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 + 2 tbsps of olive oil
1/4 cup of honey
2 flax eggs
2 tsps of vanilla extract

Prep
1. Mix all dry ingredients.
2. In a seperate bowl, mix all wet ingredients until well blended.
3. Add dry ingredients and blend until smooth.
4. Line a baking sheet with parchment paper and bake at 350 F.
5. Bake for 15-20 minutes (or until the top of the cookies look slightly brown)
Yields about 12 cookies
